Inspection Process

Objectives of Inspections

A. Educate businesses on Good Management Practices for oils and grease to ensure compliance. During the inspection, guidance will be provided and educational material will be provided to the owner or manager of the establishment with information about the program.

  • Maintenance of Oil and Grease Control Equipment.
  • Record Maintenance
  • Implementing Good Management Practices

B. Verify that establishments comply with the requirements established in PRASA Water and Sewer Services Regulations.

C. Control the discharge of oils and grease in food establishments and motor vehicle repair and maintenance workshops.
This will allow to:

  • Reduce overflows in the sewer system and comply with state and federal environmental laws.
  • Reduce the costs of repairing, replacing, and cleaning sanitary lines.

The use of a grease trap is a good practice for handling oils and greases.

What Will Be Evaluated During the Inspection?

  • Grease control equipment (GCE).
  • Operation and maintenance of GCEs.
  • Disposal and management of material accumulated on GCEs in places authorized by environmental laws.
  • Implementation of Good Management Practices (GMPs) to prevent discharges of oils and fats to the healthcare system.
  • Record keeping.
  • Employee training.
  • Discharge to the sanitary sewer system.

Avoiding environmental pollution and risk to public health is the greatest benefit.
